I must say... I truly enjoy baking. Today it was peanut butter chocolate chip... Yum:) its funny how much i enjoy making them and not really eating them. Oh well. Others gain:)

Under pressure.
Who would have thought that doing all these great things for my body and myself would be as stressful as its been. I'm constantly berating myself for not making it to the gym, for skipping a meal, for thinking about a snickers bar...and yet, I know that if I give up and go back to my old eating habits, I'm going to feel worse.
Did you know that every time I drank soda I would beat myself up... For soda!! I've been told every time I went to the hospital with kidney stones I needed to change my habits, my kidneys can't keep up, or my waistline for that matter. And here I am working toward my dream body ( one with a pregnant belly) and I'm stressing about what I can't have when in reality I should be thankful that I'm working toward what I really want.

One week down.
So this week, I've had no soda, red meat, pasta, sweets, very little sugar and carbs. I feel better and already see a difference. I'm learning new snacks to make that are healthy and delicious. I went to the farmers market today and bought fresh veggies and fruits. There are times that it's hard.... More or less when I see girl scout cookies... But I will do this!!
Great and delicious snack
Slice zucchini and yellow squash, lay on a cookie sheet and drizzle with olive oil, fresh garlic and Parmesan cheese. Bake at 350 for about 15 minutes. Soon good:)

Halfway through my first week
Well I'm halfway through my first week and 2 temptations have already landed on my doorstep. First one Is the happy hour that enterprise is throwing my office, all those unhealthy appetizers!! And the fact that I forgot my lunch today ( forgot to make it more like it) either way I had to get lunch and I was starving... So vegetarian pho it was. It did the trick for about an hour.... But I'm hungry again!!!! What Is it about eating healthier that makes you eat more.... And you notice what other people are eating more.. I think by next week I should be good; but geez!!!
I'm just working toward a goal of feeling better. I don't want to lose weight.... Just be healthier; and no matter how hard it is.... I'm going to do it!!!!!
